I've always wanted to eat raw food and have a primal diet, since u was a kid I've always thought that uncooked meat looked more delicious then cooked but I have no clue where to source high quality organs and meat from. I live in a rural area with lots of Amish people so I was wondering if I should talk to them.

You should do your own research on this and get an extremely trusted good meat source because raw meat is obviously unsafe unless u get it from a good source that's the key but raw meat has benefits such as retaining vitamin b (B1,B6,B9,B12) and specifically raw meat organs have a highly rich sources of vitamin C , Raw meat also contains Antioxidants and vital enzymes like Glutathione COQ10 and Natural proteolytic enzymes and it also gives great hydration from cellular water and unoxidized fatty acids which high heat cooking oxidises (Omega 3s, CLA) but this assumes a very good source that's healthy chewing will be harder and there may be digestive issues i suggest eating a diet of both raw meat and cooked meat to get benefits from both Cya!

Carnivorous creatures result in biomagnification concerns (prey eats toxins so predators absorb all of those), and herbivores often carry significant parasites. Omnivores can have both, or neither. This results in certain parts of the body being safer, but also more challenging. For example black bear muscle tissue is generally safe(ish), but it is miserable to try and chew through when cooked in standard methods, let alone not prepared. As @zen said above, be very cautious where you're sourcing it, and even then, be at least open to the idea of some preparation to minimize risks wherever you can
